I bake and decorate sugar cookies for family and friends as a hobby. I have struggled with bubbles in royal icing for years! I have tried numerous different royal icing recipes and used many different brands of meringue powder - searching for that one royal icing recipe that delivers a smooth and bubbleless (is that word?) finish. I purchased the Cheerful Baker’s royal icing and homemade meringue powder recipes and what a game changer!!! The royal icing always goes on smooth without bubbles and I can even make it a thinner consistency than I usually would and the icing doesn’t run off the cookies! I highly recommend purchasing both her recipes.
